The exocrine pancreas is necessary for the digestion of fat, protein and carbohydrate. Inactive proenzymes are secreted from acinar cells in response to circulating gastrointestinal hormones and are then activated by trypsin. Bicarbonate- rich fluid is secreted from ductular cells to produce an optinum, alkaline PH foe enzyme activity.
Pancreas contain following enzymes which act on different food substances.
Amylase β acts on starch and glycogen
Lipase β on triglycerides
Colipase β on triglycerides
Proteolytic enzymes like trypsinogen β acts on proteins and polypeptides
Chymotrypsinogen- do
Proelastase - do
Procarboxypeptidases - do
