SACCHAROMYCES CEREVISIAE
Dried Yeast
Unicellular fungi belonging to the family Saccharomycetace-
ae, dried by a process which avoids decomposition of the vi
tamins present. The chief species are Saccharomyces
cerevisiae, S. cartsbergensis, and S. monacensis. Dried yeast
contains thiamine, nicotinic acid, riboflavine, pyridoxine,
pantothenic acid, biotin, folic acid, cyanocobalamin, amino-
benzoic acid, inositol and chromium.
Dried yeast is a rich source of vitamins of the B group. It has
been used for the prevention and treatment of vitamin B defi-
ciency in doses of I to 8 g daily by mouth. Yeast is an ingre-
dient of some preparations for treating haemorrhoids, and
some preparations intended to restore normal gastro-intesti-
nal flora. Yeast is widely used in brewing.
